Originally a recipe from Canadian living, I made a couple of changes. But boy was this one a hit in our house! For those nights when you need to feed in a hurry because they are starving!
- 2 tbsp (30 mL) olive oil
- 2 onions, chopped
- 4 cloves garlic, minced
- 1 can (28 oz/796 mL) canned tomatoes
- 4 cups (750 mL) vegetable stock or chicken stock
- 1/2 cup (60 mL) tomato paste
- 1/4 tsp (1 mL) pepper
In saucepan, heat oil over medium heat; cook onions and garlic, stirring, for 5 minutes or until softened. Add tomatoes, stock, tomato paste and pepper; bring to boil. Reduce heat and simmer for 15 minutes or until slightly thickened.
Using immersion blender or in blender, puree, reheat if necessary.
